Toasted Mamon
I really love this mamon tostado. Toasted bread in english. I remember EGGNOG everytime I eat this.
Mamon tostado that one buys commercially is a bit hard to chew and is dry on the palate, since the ingredients are not balanced. The real mamon tostado has generous servings of duck eggs and less flour, making it soft on the palate. The result is a cheesy and creamy flavor unlike any other.

bong bongs piayaya in bacolod
Piaya is a flat unleavened bread filled with mozcovado (raw) sugar. A product of the Negros provinces, sugar capital of the Philippines, it is produced and available at BongBong's.
What’s the texture like? The bread is flaky, just like the Chinese hopia, and the filling is, of course, sweet. The dough is prepared then formed into small balls. The filling of mozcovado sugar is spooned at the center of each ball then the ball is re-shaped. Rolling pins are used to flatten them. Ovens used for commercially produced piaya are not enclosed contraptions but more like huge open griddles. The flattened piaya are arranged in rows and columns, cooked until the underside is lightly browned then flipped over to brown the opposite side. They are cooled then packed for selling.

Bicol Express
For food lovers, Bicol Express is the super spicy, yet, sought after special delicacy of the Bicol region. But for travelers, Bicol Express has another definition - the smooth, fast journey across Bicol. Thanks to the nicely paved and less congested super highways, Bicol has probably given me the best road experience thus far.

Erlyn Joy Grey
Piyaya a sweet biscuit is something that I always get to eat when a family member or friend brings home “pasalubong” from Iloilo. So when I visited the Salcedo Food Market, I was pleased to see freshly cooked piyaya for only 10 pesos each. The best thing is it’s warm and not too sweet . What a delight to savor freshly cooked piyaya . It’s quite different from eating it straight out of the plastic bag.
